I omitted the coconut (I'd used all of it to make oatmeal-coconut-date cookies) and only had three cups of oatmeal (for the same reason I was out of coconut) but I still had enough to fill three pint jars. I'm giving one jar for a friend and keeping the other two for me. It’s perfect!
